Delight in the Festive Flavors: Traditional Swedish Christmas Saffron Buns Recipe
Lussekatter, or Saffron Buns, are a beloved traditional Swedish Christmas treat. These golden, twisted buns are not only delicious but also bring a touch of warmth and festive cheer to the holiday season. Made with saffron, a precious spice that gives them a beautiful yellow color and a unique flavor, these buns are a staple in every Swedish home during the Christmas festivities.
Ingredients:
1 ½ teaspoons saffron threads
1 cup milk
½ cup unsalted butter
⅔ cup granulated sugar
1 teaspoon salt
1 package (2 ¼ teaspoons) active dry yeast
4 ½ - 5 cups all-purpose flour
½ cup raisins
1 egg, beaten (for egg wash)
Pearl sugar (for decoration, optional)
Instructions:
Start by grinding the saffron threads using a mortar and pestle until they become a fine powder. It will help release the flavor and color when mixed with the dough.
In a small saucepan, heat the milk and butter over medium heat until the butter has melted, being careful not to let it boil. Stir in the sugar and salt until dissolved. Remove from heat and let it cool to around 110°F (43°C).
In a large mixing bowl, sprinkle the yeast over the warm milk mixture and let it sit for 5-10 minutes, or until it becomes frothy. This step ensures that the yeast is active and will help the dough rise.
Add the saffron and 4 cups of flour to the mixing bowl and stir until a thick and sticky dough forms.
Turn the dough out onto a floured surface and knead for about 5 minutes, gradually incorporating more flour until the dough is soft and smooth but still slightly sticky to the touch.
Place the dough back into the mixing bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 to 1 ½ hours, or until it has doubled in size.
Once the dough has risen, punch it down to remove air bubbles and divide it into 12 equal pieces. Roll each piece out into a long rope, about 15-16 inches (40 cm) in length, and then shape them into an "S" or spiral shape.
Place the buns on a baking sheet lined with parchment paper, cover them with a towel, and let them rise for an additional 30 minutes.
Preheat your oven to 400°F (200°C).
Before baking, gently press a couple of raisins into each end of the buns.
Brush the buns with the beaten egg wash, ensuring they are thoroughly coated. This will give the buns a beautiful golden color when baked.
Optional: Sprinkle pearl sugar over the buns for extra decoration and a touch of sweetness.
Bake the buns for about 10-12 minutes, or until they turn a lovely golden color.
Once baked, remove the buns from the oven and transfer them to a wire rack to cool.
